Orzo & Boursin Spinach & Sundried Tomato Bake
In a casserole dish:
1 boursin cheese
2 cups uncooked orzo
3 cloves garlic chopped fine
1 cup chopped sun dried tomatoes
2 tbsp sun dried tomato oil
Cover with 4 cups of unsalted veg stockĀ
foil & bake at 425 for 10 minutes
Stir and add:
2 cups spinach
1.5 cups white cheddar (or whatever cheese you have on hand)
mix, cover, bake for 2-3 minutes until the orzo is cooked and the stock is absorbed
